
Cream of Potato Soup
Ingredients
3 c. diced Yukon Gold potatoes
1/2 c. diced green onion
1/2 c. diced celery
1 carton chicken broth
2 c. milk
1 c. sour cream
2 T. flour (gluten free flour blend works just fine)
Method
Bring first four ingredients to a boil. Cover and cook until vegetables are tender. Do not overcook.
Add 1 c. milk to pot. In bowl, stir together 2 T. flour, 1 c. milk, 1 c. sour cream until blended. Add to pot. Cook until thickened, stir frequently.
Add bacon or ham if desired. Enjoy!
