Cream of Potato Soup.

This soup is sooooooo good, we double the recipe because we like it so much. And we top it with bacon and cheese. Perfect for cold winter days!

Cream of Potato Soup

Ingredients

3 c. diced Yukon Gold potatoes
1/2 c. diced green onion
1/2 c. diced celery
1 carton chicken broth
2 c. milk
1 c. sour cream
2 T. flour (gluten free flour blend works just fine)


Method

Bring first four ingredients to a boil. Cover and cook until vegetables are tender. Do not overcook.

Add 1 c. milk to pot. In bowl, stir together 2 T. flour, 1 c. milk, 1 c. sour cream until blended. Add to pot. Cook until thickened, stir frequently.

Add bacon or ham if desired.  Enjoy!
